FFwD: Deconstructed BLT with Eggs

It has been a beautiful day!  After I picked up my children from school, we spent the afternoon on the beach... taking full advantage of the British heat wave!  A simple, delicious salad for dinner was perfect.

I love BLTs or anything with bacon for that matter.  This was super easy to pull together as you can make all of the components ahead of time.  I made hard boiled eggs per the recipe, but also made one with a fried egg just for fun.  The fried egg definitely gave it a breakfast feel, but was nice.  Next time I may try adding avocados, yum!

  1. I just purchased avocados and I wish I'd had them for this salad. Your fried egg is a great idea...I love veges for breakfast and this would be perfect.

  4. how was it with a fried egg? it looks delicious! :) We are enjoying the same heat wave, here in the Cambridge area... getting in plenty of sunshine with my daughter!

  6. A BLT omelette is a great idea, if only I could master omelette making... mine usually end up as fritattas :)

    The fried egg was good, sort of turned it into a warm salad.

  8. Adore friend eggs on salads! I just made this again using a poached egg and I loved the runny goodness mixing into the whole thing!

  10. I think I'd like the runnyness of the fried egg. Nice idea. I was going to add avocado, but it was too ripe, not attractive. An afternoon at the beach sounds great!

  11. I think a poached egg would be nice, another egg I haven't mastered :)

    I live on a little island in the English Channel and we have had warmer weather this past week than we did in the summer! So I have been taking full advantage of it because any day now the rain and cold will set in... then I'll tackle my growing list of things to bake with pumpkin & apples!
