FFwD: Lyonnaise Garlic and Herb Cheese


I really need to start looking ahead at our recipes.  We had friends over for dinner last weekend and this would have made a better little nibble than the store bought hummus I served.

The water that drained out of my ricotta and nothing was about the same, so I'd skip that step next time.  I thought the flavors were tasty, just a bit bland.  I think more garlic and maybe lemon juice instead of the red wine vinegar (I couldn't even taste that and I used double) would boost the flavor.  Look forward to see if anyone else made seasoning adjustments.

  2. I agree, ricotta doesn't do this justice. I really think it needs more of a "kick". I would like to try some goat cheese
    and different herbs. However, your recipe looks great. wonderful photos.

  4. Lemon juice is a good idea. I've decided I like flavor! With lots more flavor this recipe would be a good idea. Maybe a different cheese...ricotta starts out bland and stays bland through this recipe.

  5. I grated the shallot and garlic, and added them along with the resulting juices. I think it really made a difference taste wise. I used parsley and basil because that's what I had on hand. It is so much better after resting for 8-12 hours after adding the aromatics and herbs. Hope this helps!

    1. I shouldn't have rinsed the shallots like the recipe said, washed away that ingredient completely. More of both would be good. Thanks!

  8. Such a gorgeous photo…looks like it came out of a magazine! I thought of adding lemon to mine but, I always like to follow the recipe the first time I make it! Lovely job!! Have a wonderful Memorial day!

  10. My experience with this one is it needs A LOT of salt, at least a teaspoon or more. Your crackers look very interesting. Are those pumpkin seeds along with the sesame seeds?

    1. I kept adding salt too. Yes, those are sesame & pumpkin flatbread crackers, one of my favourites :)
