This weeks recipe was a hit. My 6 year old son, who is my toughest food critic even gave it a 50 out of 50 :) Next time I make these I might try adding bacon, cheese or herbs to the potato mixture. I served mine with chicken and broccoli and can see where a sauce would have really been delicious with the potato pancakes.
Below, I had to share my one almost disaster with our Thanksgiving meal. I was reheating my mashed potatoes and had them obviously on too high of a heat with the lid on. I went to say hello to our guests when my husband called me to come quick! Made me and everyone in the kitchen laugh.

The pumpkin looks divine! I agree that the matafan are definitely a blank canvas to work with, both with toppings and mix-ins.

ReplyDeleteI thought they could've used a sauce of some sort too. Bacon sounds like an excellent idea - I mean, when is bacon ever a bad idea?! Too funny about your mashed potatoes!!

Those mashed potatoes are awesome! My kids would have thought that was the best part of the whole Thanksgiving!

What a fabulous review from your son. You can't get better than that! :) I like your idea of perhaps adding some bacon or other things into the batter next time. We so enjoyed these.

(I've still not made that one. Wondering if over the holidays I might be left with some bread and I can have an excuse.)
