Once out of the oven, I debated on how to cut into my pumpkin because I thought it would totally fall apart into a gooey mess. But it actually sliced pretty easily. After dinner I was re-reading the recipe and saw Dorie suggests scooping the meat of the pumpkin into the stuffing and mixing it all together. Great idea for next time.
I'm looking forward to reading about what everyone did with this recipe. Some things I'd like to try next time: with cooked rice and mix it all together like a risotto, making it in little baby pumpkins for individual servings and maybe a sweet version - like a rice pudding with pumpkin pie spices and pecans??? Oh, the possibilities!

Oooh... the rice pudding idea calls my name! That sounds fantastic. I love your little pumpkin boats. I served mine the same way. Can't imagine how many brownie points you will score with your SIL with this recipe.

We sliced ours too. I think I'd like to try everything mixed together, but I have a hunch that slicing it is going to be my preference

ReplyDeleteYou totally nailed my reaction to this recipe, pumpkins and fall !! Love them all. Nana and I are big fans of pumpkin pie and have shared many a pie over the years. Not sure anyone else in the household got a slice :) But we tended to not focus on savory recipes and this one was the perfect "eye opener". Lovely and your results looked just delicious. Enjoy!
